Frank Fol
Frank Fol, the Vegetable Chef, is constantly innovating with our varied, original, healthy, balanced and delicious recipes.
His famous "Légumaise" is a magical ingredient, which has the creaminess of mayonnaise but contains four times less oil and 80% vegetables!
The career of this star-studded Chef, particularly at La Villa Lorraine, L'Ecailler du Palais Royal and Le Sire Pynnock, is impressive and cosmopolitan. He has travelled the world organising parties and events.
Frank is also the author of many cookery books on sale in our restaurants.


Eurotoques
EXKi is a member of the Euro-Toques association, chaired by Paul Bocuse and Pierre Romeyer.
This association is recognised by the European Union, and its membership is made up of cooks and chefs from all parts of Europe, united in the desire to promote authenticity and the proper manufacture of the best products.
The Euro-Toques association now has some 4,000 members. Members join by signing a Charter of Commitment to protect the products and above all the expertise of artisans.
At EXKi, we are very honoured to uphold the permanent commitments of Euro-Toques to protect the richness and flavours of our culinary heritage.


CIRIHA
CIRIHA, the Centre for Information and Research into Food Intolerance and Health, at the dietetics and applied nutrition department of Haute Ecole Lucia de Brouckère.
Ghislaine Dufourny and Caroline Etienne of CIRIHA have worked with EXKi to calculate the nutritional value of each dish.
CIRIHA is a subsidised independent scientific centre that is developing as a guidance centre on food hygiene and practical nutrition.

Gauthier Poulain, designer
Gauthier Poulain has won the Young Belgian Designer prize.
Gauthier designed the furniture for most of our Belgian EXKis.
His artistic genius is also being applied to the decoration of our first Parisian restaurant.

Café Liégeois, a family-run company and partner of EXKi, deploys its expertise at all stages in the production of the very best coffee. Selecting, blending and slow-roasting beans guarantees a perfect balance of coffee aroma, acidity and body.
