Cabbage salad with grapes and goat cheese

Prep: 20 mins

Ingredients for 4 people:

  • 300 g of grapes
  • ¼ of white cabbage
  • ¼ of celeriac
  • 1 Jonagold apple
  • 1 lemon
  • 30 g of walnut kernels
  • 120 g of fresh goat cheese
  • ½ red oak leaf lettuce
  • 4 tbsp of rapeseed oil
  • Salt and pepper

  • Finely mince the white cabbage, using a mandoline slicer. Place in a large bowl, sprinkle with the juice of the lemon and mix thoroughly. Let it rest.
  • Meanwhile, cut the grapes in two. Wash and drain the lettuce leaves. Peel and grate the celeriac. Cut the apple (unpeeled) in small dices. Add everything to the bowl, together with the rapeseed oil, some salt and pepper. Mix well.
  • Scatter the chopped walnuts and crumbled goat cheese over the salad and serve right away.

Tip: you can replace the white cabbage with red cabbage.
