Fruit of the month, fruit in the spotlight ...

For our health, and that of our planet, we put a fruit or seasonal vegetable in the spotlight every month. The lucky winner is featured in several delicious recipes. Discover them here!

Have you ever tried strawberries in sandwiches? In June, you will see the Caroline sandwich in our cold counters. Caroline is the name of a real customer who won an EXKi contest in Paris. Her winning recipe: organic baguette, Belgian strawberries, fresh goat’s cheese and rocket. You will discover seasonal strawberries in our vegetable-based desserts too (chia seeds, strawberries, red peppers and basil verrine).

The recipes containing our fruits and vegetables of the month are seasonal. They change...every month (it's true!) - which allows us to work with the best seasonal products. Good for quality. Good for the planet.

Cook our seasonal recipe in 25 minutes : Chia pudding with strawberries, pepper and basil

Prep + cook: 25 mins (+ 2 h rest)

Ingredients for 4 people:

  • 500 g of strawberries
  • 1 red bell pepper
  • ½ orange
  • 80 g of chia seeds
  • 5 dl of vegetable drink of your choice (soya, almond, etc)
  • 1 vanilla pod
  • 8 cl of agave syrup
  • 1 tbsp of cane sugar
  • ½ bunch of basil

  • In a small bowl, whip together the chia seeds and the vegetable drink. Add the agave syrup and the vanilla pod, split and scraped. Let it rest in the fridge for 2 hours, mixing it up once in a while.
  • Cut the pepper in dices and place them in a small casserole with the juice of the half orange and the cane sugar. Cover and let simmer for 15 mins on low heat. Keep aside 4 small strawberries and cut the rest in pieces. Add these to the casserole and continue cooking for 5 mins, uncovered. Let it chill.
  • Add the chopped basil leaves in the strawberry compote; mix and distribute in 4 bowls. Add the chia pudding and decorate with basil and strawberries. Serve chill.

Tip: you can replace the basil with mint and take out the vanilla.
