Predominantly local and vegetable-based
Food diversity and freshness are essential to a good, balanced diet. EXKi champions the use of local, non-processed foods, with a predominance of seasonal vegetables.
A good diet requires a generous consumption of vegetables. This is why the vegetable is at the heart of all our culinary creations. Half of our dishes are purely vegetarian. And all our vegetables are sourced from farms located within a radius of 300km of our creative kitchen.

Some of our creative recipes include animal proteins but only as an accompaniment to vegetables. And not the reverse. Because a healthy diet, balanced and environment-friendly, inevitably comprises a large proportion of vegetables.
Therefore, at EXKi, 'Veg & Mix' raw fresh vegetables are accompanied by a finely cooked vegetable side, with a choice of 100% pure, cold-pressed and unpasteurised vegetable and fruit juices, with no added sugar, detox smoothies and ‘Fruit & Tea’ infusions.
Our chefs also promote fruit because it is packed with valuable nutrients, including vitamins, minerals, antioxidants and fibre. Of course, it is best when fresh with no added sugar.
Less fat, less sugar, more taste
For the seasoning and dressing of EXKi products, our chefs prefer to use vegetable oils and vegetable emulsions rather than mayonnaise and other oily sauces.
These emulsions perfectly complement the daily intake of carbohydrates, fibre, vitamins and minerals. They contain 80% fresh vegetables and 20% rapeseed oil (so 4 times less fat than traditional mayonnaise).
The same goes for added sugars: we banish them from our salads and fruit juices, green salads, sandwiches, soups and hot dishes. Healthy cuisine is simple cuisine: quality products don't need flavour enhancers and added sugars.

Super-ingredients are foods with significant nutritional value for our physical and mental well-being:
